Chef Fox brought his experience in western and Japanese fish butchery, French and Italian pastry to Island Country Club where he worked to craft ideas for Wine Dinners and specialty menus. After this he took an amazing opportunity to go work at Aquavit, a 2 star fine dining Michelin restaurant in NYC, to work with world renowned chefs and further his skills.

This is just a sample of his experiences. Now he works with local fishermen, farmers, foragers, and artisans to merge the best local resources with exceptional global ingredients. All to give you a night that will never be forgotten. Your evening and menu will guided by Chef Fox, who will personally serve you each part of the meal as he prepares to ensure its perfection.
